Sambal Goreng Kentang (Spicy Fried Potatoes)

INGREDIENTS

1 kg of potatoes – cut them into cube-shaped pieces

5 cloves of red onion, pulverize them finely

3 cloves of candleberry, pulverize them finely

1 teaspoon of shrimp paste, pulverize it finely

3 cloves of garlic, pulverize them finely

2 cloves of red onion, pulverize them finely

3 glasses of coconut milk (1/2 of a coconut)

½ teaspoon of salt

1 ½ tablespoon of sugar

1 leaf of bay

2 segments of galangal, mash them

3 tablespoons of cooking oil

COOKING DIRECTIONS

  • Sauté the pulverized spices, bay leaf and galangal until they become fragrant

  • Add the potatoes, cook it for 10 minutes

  • Add the coconut milk, salt, and sugar – cook it for 20 minutes

  • Cook it until the coconut milk looks thick
