Stir fried tofu and bean sprouts (Tumis tahu taoge)

Ingredients:

500 g tofu, cut it into dice of 1cmx1 cm and fry until golden

150 g beansprouts (you may remove the root if you have time)

2 clove of garlic, crushed and chopped

2 red chilies, thinly sliced

1 cm ginger, crushed

2 stick of celery, cut into ½ cm

100 ml chicken/beef stock

1 teaspoon fish sauce

¼ teaspoon white pepper

¼ teaspoon sugar

¼ teaspoon salt

1-2 tablespoon of oil

Cooking instructions:

  1. Heat oil in a wok or frying pan
  2. Add garlic, red chilies, and ginger and fry until slightly brownish
  3. Add fish sauce and chicken/ beef stock and wait until boiling
  4. Put the tofu and bean sprout
  5. Season with ground white pepper, salt and sugar
  6. Let simmer until all the flavor goes into the tofu
  7. Add celery, stir.
  8. Serve immediately over  rice
