East java style beef soup (Rawon)


Ingredients for the soup:
500 g beef, cut into dice
5 stalk of spring onion, chopped
6 shallot, chopped
2 litter of water
5 lime leaf
2 stalk of lemon grass
1 teaspoon of salt
½ teaspoon of sugar
2-3 tablespoon oil
1 ½ teaspoon white pepper
2 teaspoon coriander
3 clove of garlic
3 cm ginger
4 cm turmeric
4 cm galangal
A bit of tamarind
5 black nut (keluwek)
2 red chilies

Ingredients for the sambal:
2 red chilies
3 Thai pepper
2 clove of shallot
1 teaspoon shrimp paste
½ teaspoon salt
1 teaspoon sugar
100 g short bean sprout

Cooking instructions
To make the soup:
1. Boil the beef until tender.
2. Lower the heat and add lemongrass, spring onion, lime leaf, sugar, and salt.
3. Blend the white pepper, coriander, garlic, ginger, turmeric, galangal, tamarind, black nut, and red chilies. Put in some water if needed.
4. Stir fry the shallot until it change color and add the spice paste. Stir until the aroma comes out.
5. Pour the spice into the broth.
6. Let simmer for 30-40 minute.
To make the sambal:
1. Fry the shallot, Thai pepper, and red chilies
2. Blend them together with salt, sugar and shrimp paste in the food processor
3. Sprinkle with the short bean sprout
Serve the soup with white rice, sambal, prawn cracker and salty hard boiled duck egg.
