Indonesian salad with peanut sauce dressing (Pecel)


Ingredients for the dressing:
250 ml hot water
100 g fried peanut
2 red chillies, blanched
6 lime leaf
5 cm sand ginger, peeled
Juice of 2 kaffirlime
1 tablespoon palm sugar
½ teaspoon fried shrimp paste
½ teaspoon salt
½ teaspoon tamarind

Ingredients for the salad:
75 g bean sprout, blanched
50 g long bean, cut and blanched
1 cucumber, cut into tiny pieces
75 g spinach, blanched
50 g lemon basil leaf

Cooking instructions:
1. Blend fried peanut, red chillies, lime leaf, sand ginger, kaffirlime juice, palm sugar, fried shrimp paste, salt, tamarind in a food processor.
2. Put the paste in a bowl and mix it with the hot water.
3. Arrange the vegetable in a plate.
4. Pour the dressing on top of the vegetable.
5. Serve immediately.
