Indonesian style tofu omelet (Tahu telur)


Make 6 serving

6 egg
½ teaspoon salt
1 tofu, diced 1×1 cm, fried for 3 minutes
150 g beansprout, soft boiled
1 cucumber, thinly sliced
2 tablespoons fried shallot
3 garlic clove
2 Thai chilies, you can add more if you like it hot
½ teaspoon salt
100 g fried peanut
50 g palm sugar
2 teaspoons shrimp paste
100 ml warm water
6 tablespoon sweet soy sauce
1 stick of celery, sliced

Cooking instructions:
1. Beat the egg with salt, add the fried tofu and mix well. Divide into 6.
2. Heat some oil in a pan (20 cm in diameter), fried each portion of the egg until golden.
3. Blend garlic, Thai chilies, salt, peanut, and palm sugar in a food processor.
4. Add the shrimp paste and water to the spice paste, mix well.
5. Arrange the egg in 6 plate, add the cucumber and beansprout on top of the egg and pour the peanut sauce. Add the fried shallot.
6. Serve immediately over rice or lontong
