Beef Rendang

Rendang is one of traditional Minangkabau (West Sumatra) dishes that used beef as it’s main ingredients and with lots of spices added to it. Some says that this is the most famous food in Indonesia, restaurant that serve it can be found everywhere in Indonesia, even in some neighboring country such as Malaysia and Singapore.

Rendang also voted as number 1 on CNN’s world 50 best food. As this is reader choice and decided by vote it’s meant to be taken with pinch of salt. But hey, it’s still one of the most delicious food in the world nevertheless


  • 1 kg beef, cut into small chunk
  • 0.25 beef liver, cut small
  • 0.25 pound beef lungs, cut small
  • 0.5 of coconut, grate it, then fry it until it gets oily
  • 2 bay leaves
  • 1 sheet turmeric leaves
  • 1 asam kandis
  • 10 grain cloves
  • 3 inch of cinnamon
  • 1.5 ounces of potatoes
  • 1 ounce of red beans
  • 2 tbsp of salt


  • 0.25 pound of red chilies
  • 1 ounce shallot, peeled and sliced
  • 1 garlic clove
  • 3 cm ginger
  • 0.5 ounce pecan
  • 3 cm ginger
  • 1 nutmeg
  • 5 lemongrass, thinly slice it
  • 0.5 teas spoon of cumin
  • 2 tablespoon of coriander
  • 1 liter of coconut milk

Cooking instruction

  1. Blend all spices together
  2. Wash the beef, liver and lungs
  3. Heat the pan, then pour coconut milk in, boil with medium heat till it gets greasy
  4. Put all the blended spices into the boiled coconut milk, together with all the meat
  5. Add the roasted coconut, nutmeg, bay leaf, turmeric, cloves, asam kandis, cinamon, potatoes and beans.
  6. Stir and add salt, cook until all the liquid soak in to meat.
